USES: Cloves have a powerful aroma. Combined with other hot spices such as allspice, liquorice, nutmeg or cinnamon, this strong aroma is reduced. Its antiseptic properties make it an ideal spice for canning, provided it is used sparingly.

Clove goes very well with vegetables such as tomatoes or red cabbage. Its marriage with peach is also appreciated (store in a syrup flavored with cinnamon, ginger and cloves). Beef and pork are meats that go very well with cloves (in a beef stew, braised pork or stew of course!). Clove can also be put in hot milk just before it boils in the preparation of sauces such as white sauce for example.

Finally, it can be used in hot drinks such as tea or coffee to replace sugar (calorie-free!), it is of course used to flavor mulled wine.
